While poking through the Steptoe's refrigerator last night looking for something to eat, I found this WONDERFUL dish that Lisa had made for her Thanksgiving feast. I just had to share:
1sm onion, chopped
1/2 green pepper chopped
2TBL Olive Oil
3 C. Frozen whole kernel corn, thawed
2 plum tomatoes, diced
1/4lb andouille sausage, cooked and diced
1/4C. chopped green onion
1/4tsp salt
1/4tsp pepper
Saute' onion and pepper in hot oil in a large skillet over medium heat 8 minutes or until tender. Add corn, tomatoes and sausage; cook; stirring often, 15 minutes. Stir in green onions, salt and pepper; cook 15 minutes.
I could make a whole meal on this! It was sooooooo good!

Terri this sounds fab, but not sure if I can get that sausage here in the UK? could I use any sausage?
