Hawaiian Cake


My friend Diane sent me this recipe and as I had some bananas that needed using, I decided to make it this morning. Delicous! I did not put the icing on it (I have to pay some attention to calories!) But it was so moist and rich it was just terrific without it.

INGREDIENTS:3 cups flour1 teaspoon baking soda1 teaspoon salt2 teaspoons cinnamon2 cups sugar1-1/2 cups vegetables oil3 large eggs, lightly beaten8 ounces crushed pineapple, including juice2 cups mashed bananas (approximately 5 bananas)3-1/2 ounces flaked coconut1-1/2 teaspoons vanilla extractINGREDIENTS for Cream Cheese Glaze:1-1/4 cups powdered sugar3 ounces cream cheese, softened1 Tablespoon light corn syrup1/2 teaspoon vanilla extractWalnut halves or chopped nuts for garnish TO PREPARE:1. Preheat oven to 350 degrees. Butter and flour a 10-inch tube pan with removable bottom.2. In a large bowl, sift together flour, baking soda, salt and cinnamon. Add sugar and combine well.3. In a mixing bowl, combine vegetable oil and eggs. Add to dry ingredients and stir until just combined. Add pineapple and bananas to mixture. Stir in coconut and vanilla. Pour into prepared pan.4. Bake 1 hour and 10 minutes to 1 hour and 20 minutes or until cake tester comes out clean. Cool cake on a wire rack for 15 minutes. Remove sides of pan and cool cake completely on tube. Run knife around bottom of pan and tube; invert cake onto plate. Top with Cream Cheese Glaze when cool.5. Prepare Cream Cheese Glaze: At low speed, beat together all ingredients until smooth.6. Spread glaze on top of cooled cake, letting excess drip down sides. Decorate top with walnut halves or chopped nuts. NOTE: A deliciously moist cake for a crowd. SERVES: 10
